we took a long walk around the farm this past week. walking around the farm leads to talking about food. a lot. surrounded by produce from below the earth to touching the sky and everywhere in between, how could we not? some of us found potatoes deep in the soil, we all picked apples silhouetted by the bright blue sky, most plucked the last of the strawberries before tucking them in for winter.
of everything we saw that day on the farm, the field of bolted dill had me captured. i wanted to run through it, roll it in, take a thousand photos...dill is my favorite herb after-all. everything about it: taste, smell, sight. put that lovely yellow up against the creamy blue sky and well, i was a goner. i didn't do any of that except the photos (and not even close to a thousand, more like five) for i had a baby strapped to my front and conversations in process and a mouth watering for strawberries....
let me get to the point, here's a recipe
(though this is all 'to taste' experiment, have fun, eat & be merry) :
- bunch of dill chopped fine
-2 japanese cucumbers sliced
-one red onion sliced thin
-a little olive oil
-a dash of vinegar
-a sprinkle of garlic powder
-a crank of coarse sea salt
toss together in a bowl, chill & eat. one of my favorite ways to consume the lovely dill.

farm momma's, this recipe is (especially) for you!!
the best grain-free brownie recipe ever (adapted from 'elana's pantry') :
throw in a food processor: 1 jar of almond butter, 2 eggs, 1/2 C. cocoa powder, 3/4 C. maple syrup, 1 tsp. baking soda, pinch of salt, Tbs. vanilla. i used just a bit smaller than a 9x13 baking dish, greased the bottom of the dish with ghee or butter, sprinkle with coarse sea salt THEN pour in the brownie batter. i like to sprinkle some more sea salt on top, my favorite being trader joe's himalayan pink sea salt, along with chocolate chips. bake at 325* for about 25-30 minutes or until toothpick comes out clean.

ReplyDeletethat's how we eat cucumbers with my current favorite herb, parsley (I have a long love of cilantro though). I'll have to try it with dill -- I've only ever used fresh dill in my potato salad. mmm.
