makings : : dinner

as i was slicing up the avocado for dinner tonight i remembered this last minute photo of the day taken one late evening last month.  this was eaten with two eggs. but tonight it was diced into a bowl and we poured spicy chicken soup over it.  yum.

dinner tonight was inspired by this recipe originally used off the whole foods market recipe app on my phone.

i didn't have turkey, but we did have chicken.  i cleaned the meat off two rotisserie chickens earlier this week for chicken salad, a quick snack and this soup.  i saved the bones and threw them in the crock pot with some onion and carrots for broth today.  when that was finished i threw (most of*) the ingredients for the soup in a pot and viola, dinner.

*we didn't have oregano or lime so i used some thyme and skipped the citrus all together.  i forgot the bay leaf. we opted out of the cheese. still delicious.

  1. Oh, I do the same thing with rotisserie chickens! A great way to help out with meals during what always turns out to be a busy week.
