number one. butternut squash soup.
the other evening we dashed out of the house for elli's tumbling class. i had no idea what to make for dinner and wasn't about to go to the store. what's a girl to do? i thought; that's what i did. i thought about what we had on hand and what i could do with it. we have an hour between tumbling and ocean's ballet class, so we dashed back home. with 15 minutes to come up with something, i was thankful for my previous pondering. after a quick recipe card shuffle, this is what we had:
butternut squash seeded, peeled and cubed
an onion diced
2 apples peeled and diced
a box of veggie broth
a cup of water
salt + pepper to taste
all thrown in a pot on the stove top and cooked until the squash was tender.
blend.
tada!
let me just say that the leftovers [if there are any] are just as good the next day.
all three of my children gobbled it right up served with a side of garlicky rice cheese jack quesadillas.
easy and yum.

ooh - yummy! i made an acorn squash soup last week in the crockpot with chickpeas, cumin, ground coriander, paprika and a little allspice. it was delish. we also have been loving your white bean and kale soup. thanks for the recipes!
